DESCRIPTION
Likely to be more fragrant and commonly known as Black Autumn Truffle, the Tuber Uncinatum is outwardly identical to the black summer truffle. They differ in the interior, that is darker with several strongly marked white veins.

PRESERVATION METHOD
The winter scorzone or fresh black autumn truffle (incorrectly called black hooked truffle) should be stored in the fridge, wrapped in an absorbent or porous paper, which will be changed often to prevent it to get wet, creating molds. The product can also be wrapped in absorbent paper and kept in the fridge, in a glass or plastic container. The fresh black autumn truffle will keep for around ten days.
