DESCRIPTION
The Summer Truffle emanates a soft fragrance, whit a pleasant and gentle taste. The black and warty texture contrasts with the weak shade of the interior, which goes from beige to light brown.

From mid-May to late August

Piedmont, Emilia Romagna, Marche, Umbria, Lazio, Abruzzo, Campania, Molise, Tuscany, Lombardy, Basilicata (in general along the entire Apennines)

SYMBIONT SHRUBS
Pine, oak, hornbeam, hazel, turkey oak, holm oak

PRESERVATION METHOD
The scorzone or fresh summer truffle (also incorrectly called black summer truffle) should be stored in the fridge wrapped in paper towels, which should always remain dry. This must be changed to prevent mould growth. Each wrapped truffle should be stored in a glass jar. The shelf life of the fresh summer truffle reaches about fifteen days in this way.
