Excellent as a condiment for first courses: risottos or fettuccine. It can be used pure or in addition to a mushroom-based sauce or the typical Umbrian ‘Norcina’ recipe, thanks to the summer truffle’s delicate and not too intense flavour. It is also ideal for ravioli fillings or the traditional ‘olive all’Ascolana’!
